Make healthy food fun!
Teach kids to eat spinach like a bunny, by "racing" to see who can eat a leaf the fastest! Did this when my son was 4 and he loves fresh spinach and eats it every day! Otherwise he is a real picky eater!

Replace noodles with zucchini, cheese with avocado for GF/CF meals
When your kids want lasagna, and you're doing gluten/casein/soy free, don't just use the rice noodles. Slice zucchini the long way and use those as your "noodles" - if you skin the zucchini, they usually won't even notice the difference (use organic zucchini and leave the skin on for even further vitamins). Avocado has great nutritional value, and is almost the same texture as a soft cheese, so it makes a wonderful addition to almost any gluten-free "Italian" dish, including zucchini lasagna. Almost any vegetable can be hidden in tomato sauce if you puree it well enough!

Add some flax
To get more omega-3 fatty acids into your child - try mixing some milled flax seeds into cereals, sauces, soups, and salads - it doesn't alter the taste or texture much and contains high levels of fiber including ligans, micronutrients, and omega-3 fatty acids. You can also include this in fruit smoothies.
Soak pulp when juicing
If you are "Juicing" to improve nutrition in your child's diet - be sure to soak the pulp of the fruits and vegetables in water for 15 minutes and add to the juice - you will double the vitamin content.
